Swedish Pancakes for One
Ingredients

  • 1 egg
  • ¼ cup milk
  • 1 tsp vanilla
  • 2 Tbsp flour
  • 1 tsp melted butter
  • For garnish:  lemon juice powdered sugar and fresh berries
  •  
  • Combine all ingredients except for garnish in a bowl and whisk to combine.  There will be a few lumps and that is fine.
  • Heat an 8 inch skillet with ½ tsp of butter.
  • Lift pan off burner and pour in half the batter and swirl to cover bottom of the pan.
  • Cook until edges are set and it is lightly golden brown on the bottom.  Use a spatula to losen the edges and gently lift and flip. Cook on other side for about 30 seconds or until golden brown.
  • Fold pancake into thirds or enjoy open face.  Squeeze lemon juice over pancake, add fresh berries and sprinkle with powered sugar.
