Chicken Enchiladas with White Sauce
Ingredients

  • 2 tablespoons pickled green chilies or jalapeno (see notes)

  • 10 tortillas (8 inches)
  • 1 ½ cup cooked chicken (shredded or dices, see notes)
  • ½ teaspoon cumin
  • ½ small brown onion (finely diced)
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Black pepper to taste
  • ½ teaspoon kosher salt
  • 1 medium garlic clove (minced)
  • ½ cup sweet corn or freshly cooked corn kernels
  • ¾ cup Monterey Cheese + ½ cup for the top layer
