Bub's Thin Mints
My Nephew, Bub makes these every year at Christmas.
Got this from Mrs. Fecht. Her recipe uses dark chocolate peppermint candy melts.
Ingredients
  • 1- 10 oz package Andes® Creme De Menthe Baking Chips
  • 36 Ritz® crackers
  • Waxed or parchment paper
  • Crushed candy canes or holiday sprinkles for decorating, optional
Steps
  1. Spread waxed or parchment paper on counter or cookie sheets.
  2. Melt chips in microwave, stirring every 30 seconds until melted.
  3. Keep melted chocolate warm in a crockpot® or similar.
  4. Dip cracker into chocolate, covering completely.
  5. Allow excess chocolate to drip off.
  6. Pace on paper to set.
  7. If decorating, the cookie needs to be a little wet. Place a few cookies to set, decorate, then dip more.
  8. If not decorating, allow cookies to set.
