Gluten-Free Blueberry Zucchini Muffins
Ingredients
  • ⅓ cup unsweetened applesauce
  • ⅓ cup unsalted butter melted (you can sub coconut oil if desired)
  • 2 large eggs beaten
  • ⅓ cup pure maple syrup
  • ¼ cup avocado oil or another cooking oil of your choice
  • 2 tsp vanilla extract
  • 2 cups almond flour
  • 1 ¼ cups rolled oats ground into powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 cup fresh zucchini spirals chopped
  • 1 cup fresh or frozen blueberries
