Ingredients
- 1 lb shredded Rotisserie Chicken
- 2 cups Red Enchilada Sauce
- 18 Corn Tortillas
- Chihuahua, Oaxaca or Mozzarella cheese, grated
- Sour Cream or Crema Mexicana
Steps
- Warm up shredded rotisserie chicken with 1 cup of green salsa. Warm up the tortillas. Spoon some green salsa and spread it on the bottom of the casserole dish. Layer 6 tortillas on the bottom. Spoon ⅓ of the chicken over the tortilla. Sprinkle some cheese. Then layer another 6 tortillas, salsa, chicken filling, and cheese. Finally, layer everything else again.
- Bake at 350° for 20 minutes. Garnish with sour cream or Crema Mexicana.
