Ingredients
  • subheading: My daughter came for visit and brought some extra Burrito Tortillas. We haven't had Burritos in years so I inventoried the freezer and we had everything needed ( would have like an avocado). Pulled out some ground beef, leftover frozen Spanish Rice and frozen IP Refried Beans. I just let the refried beans thaw overnight in the fridge and hit them with the immersion blender stick. 1 Cup water in the IP, place trivet with frozen ground beef, then taller trivet over the beef wit h the leftover frozen rice. Set for 10 minutes with QR. Remove the rice and set aside, pour off the water from the beef and set to saute just to brown slightly. Add ⅓ C Salsa and a bit of Cumin, close lid and set to manual for 3 minutes with QR. Layer ingredients along with some grated cheddar cheese into the Burrito Tortilla and place in Air Fryer to warm and slightly brown on bake for 4 minutes. Topped with shredded lettuce, tomato, and black olives. Taste so good only thing that would have been better would the addition of avocado. "Next Time" :-):
