Pappardelle with Chicken and Pistachio-Mint Pesto
Ingredients

  • 1 small zucchini, very thinly sliced or shaved
  • 1 small yellow squash, very thinly sliced or shaved
  • 1 ½ cups mixed cherry tomatoes, halved, or quartered if large
