Baked Rice Pudding Recipe
Ingredients
  • 2 cups of cooked warm rice
  • 2 beaten eggs
  • ¾ cup organic cane sugar
  • 2 T butter
  • 3 cups milk of choice
  • 1 tsp vanilla
Steps
  1. - Beat the eggs in your casserole or whatever you are inserting into your IP
  2. - Add the sugar and 1 cup of milk and mix well.
  3. - Add the butter to warm rice, along with the remaining milk and vanilla.
  4. - Add the rice and milk to the egg mixture and stir well to combine.
  5. - Sprinkle the top with nutmeg. (or cinnamon)
  6. I used a trivet and added 1 quart of water to the IP, then lowered my stainless steel bowl into my IP. I made a sling with folded heavy duty foil. Fold the foil in so that the top of the IP will seal properly.
  7. Close the lid and set the IP on steam for 15 minutes.
  8. When it's finished, turn off the IP, remove the bowl or casserole from the IP and place a glass lid on top until it cools a bit. It will be a little jiggly until it cools.
