SUPER DELICIOUS. THE BEST CASSEROLE EVER!
Ingredients
  • 2 tablespoons olive oil
  • 1kg beef chuck steak, cut into 3.5cm pieces
  • 1 large brown onion, cut into wedges
  • 4 bacon rashers, coarsely chopped
  • 3 carrots, sliced diagonally 1cm thick
  • 2 celery sticks, sliced diagonally 1cm thick
  • 2 garlic cloves, crushed
  • 200g button mushrooms, thickly sliced
  • ½ cup (125ml) dry red wine
  • 400g can tomato soup
  • 2 cups (500ml) beef stock
  • 2 bay leaves/1 bouquet garni
  • 4 teaspoons cornflour and 4 teaspoons water, mixed together well, if needed for thickening
  • 4 small Desiree potatoes, very thinly sliced (I used a mandolin)
  • 50g butter, melted
  • Salt and pepper
  • Thyme or rosemary sprigs
  • Steamed peas, to serve
