Easy Beef Stew
Great on a cold day
Ingredients
  • 1 lb ground beef
  • 1 onion, chopped and sauteed in small amount of oil or butter
  • 4 or 5 cans of vegetables that you like such as green beans (NOT French Cut), whole kernel corn, sliced carrots, sliced potatoes, lima beans. etc. Drain most of liquid into large measuring cup to add later as needed
  • 1 large can stewed tomatoes
  • l can tomato sauce OR Rotel Tomatoes to give it more "zip"
  • 1 envelope of "Beef Stew Seasoning" mix
Steps
  1. Brown and drain the ground beef and put it in a large stovetop pot
  2. Add all other ingredients (do not drain vegetables) and stir lightly to combine
  3. Heat on low/medium low on the stovetop for an hour or so, stir frequently to keep it from burning.
Notes
  • Remember, all ingredients are already fully cooked so you're only heating the soup and blending the flavors.
  • Meena loves this with fresh, warm cornbread. Just sayin'.
