Keto Peanut Butter Blossoms
Ingredients
  • ½ cup All Natural Peanut Butter (sugar free)
  • 3 cups Almond Flour
  • 2 Eggs
  • ¼ cup Butter, softened not melted
  • ¾ to 1 cup Low Carb Sweetener (I use ¾ cup personally add more if you like it a little sweeter)
  • 2 tsp. Baking Powder
  • ½ tsp Xanthan Gum (optional but really aids in creating a better texture to the cookie)
  • For Thin Ganache- ½ cup Sugar Free Chocolate ½ cup Heavy Cream (my preference)
  • For Thicker Ganache Rosettes (truffle texture)- ½ cup Sugar Free Chocolate ¼ cup Heavy Cream
