Kale Slaw
from "Moosewood Cooking for Health"

Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • ½ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 1½ teaspoons minced fresh thyme
  • dash cayenne
  • 3 cups very finely chopped kale, ribs removed
  • 1 cup minced red cabbage
  • 1½ cups grated carrots
  • 1 cup grated apple
Steps
  1. In a cup, whisk together olive oil, vinegar, salt, pepper, thyme and cayenne.
  2. In a bowl, toss together kale, cabbage, carrots and apples. Drizzle dressing over. Mix well.
  3. Let stand at room temperature for 30 minutes.
Notes
  • Can top with crunchy item such as sunflower seeds. If standing longer than 1 hour, add apple prior to serving.
