Servings: 4-6
Ingredients
- 3 tablespoons olive oil
- 2 tablespoons cider vinegar
- ½ teaspoon salt
- ⅛ teaspoon ground black pepper
- 1½ teaspoons minced fresh thyme
- dash cayenne
- 3 cups very finely chopped kale, ribs removed
- 1 cup minced red cabbage
- 1½ cups grated carrots
- 1 cup grated apple
Steps
- In a cup, whisk together olive oil, vinegar, salt, pepper, thyme and cayenne.
- In a bowl, toss together kale, cabbage, carrots and apples. Drizzle dressing over. Mix well.
- Let stand at room temperature for 30 minutes.
Notes
- Can top with crunchy item such as sunflower seeds. If standing longer than 1 hour, add apple prior to serving.
