Breakfast Flatbreads with Jalapeño Hot Sauce

  • ½ cup whole wheat flour (or more all-purpose)
  • 1 teaspoon baking powder
  • Kosher salt and freshly ground black pepper
  • 1 cup plain Greek yogurt
  • 3 to 4 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 to 2 handfuls baby spinach
  • 2 to 3 cups grated mozzarella
  • 3 to 4 strips crisp cooked bacon, chopped
  • 1 cup cherry tomatoes, halved
  • 4 large eggs
  • 2 tablespoons finely chopped chives
