  • 1 thumb-sized piece of ginger, very finely chopped, or even better shredded
  • Lots of baby spinach, approximately 3 cups
  • 1 large handful of coriander, finely chopped (stems included)
  • 1 spring onion, finely chopped (the greens included)
  • 1 avocado, chopped into chunks
  • Juice from ½ lime
