Instant Pot Pecan Fruit Cake
Ingredients
  • Batter:
  • 2 TBSP Butter
  • 1.5 ounce organic cane sugar
  • 1/4 tsp vanilla extract
  • 1 egg
  • 1/2 cup flour
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  •  
  • Soak for 2 hours:
  • 4 oz dried pineapple
  • 4 oz dried papaya
  • 3 oz walnuts
  • 3 oz pecans
  • 1/4 cup orange juice
  • (OR: 2 TBSP pineapple liquor + 2 TBSP orange juice)
  •  
  • Plus extra pecans for topping cake
Steps
  1. Mix batter with soaked fruit and nut mixture.
  2. Put batter into greased pan (a 5" loaf pan was used)
  3. Top with additional pecans
  4. Cover pan with foil
  5. Place 1 cup of water & trivet into Instant Pot
  6. Set pan on top of trivet
  7. Cook on Manual/High for 45 minutes, then do a Quick Release.
