Creamy Vegetable Lasagne
Ingredients

  • 1 quart of homemade Marinara or  Pomodoro Sauce (or 1 jar of your favorite no-oil-added tomato-based pasta sauce)

  • 8 ounces whole wheat lasagne noodles
  • subheading: Creamed Greens:
  • 2 shallots OR 1 medium onion, sliced
  • 2 cups vegetable broth
  • ¼ cup white wine
  • 8 cups of fresh dark leafy greens of choice, chopped (I like a mixture of baby kale, baby spinach, and arugula)
  • 2 tablespoons nutritional yeast
  • pinch of nutmeg
  • ½ cup raw cashews
  • ½ cup water
  • salt and pepper, to taste
  • subheading: Creamy Cashew Cheese Sauce with Fresh Basil:
  • ¼ cup raw cashews
  • 1 cup hot water
  • 2 tablespoons tapioca flour
  • 1 tablespoon nutritional yeast
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • ¼ cup fresh basil leaves (loosely packed), minced
