Best Prawn and Salmon Laksa Recipe for Summer
Ingredients
  • 1 garlic clove, peeled and bashed but kept whole
  • 1 lemongrass stalk, halved
  • 2 tbsp red Thai curry paste
  • 500ml chicken stock
  • 400ml coconut milk
  • 2 tsp fish sauce, or as needed
  • 400g boneless, skinless salmon fillets, cut into 2cm pieces
  • 150g raw peeled king prawns
  • 1 lime
  • 600g pre-cooked udon noodles
  • 8 leaves of Little Gem lettuce or Chinese cabbage, roughly chopped
  • Handful of coriander leaves
  • 1 red chilli, deseeded and finely sliced
  • Chilli sauce, to serve (I recommend sriracha or a sambal)
