Betty’s Buttermilk Cookies
Servings: About 6 dozen
Ingredients
  • 1 cup shortening
  • 2 cups brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 4 - 4 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  •  
  • FROSTING:
  • ½ cup butter
  • 1 pound confectioners' sugar
  • 1/4 cup half & half (or cream) - or amount needed to obtain the proper consistency
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup finely chopped walnuts, optional
Steps
  1. Preheat oven to 350°.
  2. Cream butter and sugar until light and fluffy.
  3. Beat in egg and vanilla. In a separate bowl, sift dry ingredients
  4. Add dry ingredients to creamed mixture alternately with buttermilk, being careful to blend just until combined. (Don’t over mix because you will get air in the mixture and the cookies will be flat.)
  5. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets.
  6. Bake until edges are lightly browned, 9-10 minutes.
  7. Remove to wire racks to cool.
  8. For frosting, combine butter, confectioners' sugar, cream and vanilla; beat until smooth.
  9. Spread over cookies; if desired, sprinkle with chopped walnuts.
