Ornish - Curry with Vegetables and Tofu
Ingredients
  • 1 ½ CUPS onions coarsely chopped
  • 3 CUPS red or orange bell peppers seeds and ribs removed, coarsely chopped

  • 3 CUPS cauliflower florets about 1 inch in size
  • 4 CUPS unsweetened soy milk
  • 2 TABLESPOONS maple syrup
  • 2 TABLESPOONS lime juice
  • 2 TABLESPOONS cornstarch

  • ¼ CUP water
  • 2 CUPS sugar snap peas or snow peas stem ends and strings removed
  • 8 OZ extra-firm tofu drained, patted dry, and cut into ½-in cubes
