  • 1 (8-ounce) package sliced cremini mushrooms (about 2½ cups)
  • ¾ teaspoon salt, divided
  • 4 teaspoons white balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 cups loosely packed stemmed and chopped  lacinato kale
  • ¼ teaspoon crushed red pepper
  • 1 (15-ounce) can  no-salt-added cannellini beans, rinsed
  • 4 teaspoons grated Parmesan cheese
  • 2 teaspoons chopped  fresh oregano
