  • 150ml sunflower oil, plus extra for greasing
  • 150g plain flour
  • 1½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 1½ tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp fine salt
  • 4 medium eggs
  • 180g golden caster sugar
  • 225g coarsely grated carrot (about 4 medium carrots)
  • 100g desiccated coconut
  • 3 tbsp coconut flakes

  • 125g unsalted butter, softened
  • 175g icing sugar, sifted
  • 2 tbsp coconut cream
  • 180g Philadelphia soft cheese
