Buffalo Ranch Chicken Cheese Bites with Crispy Bacon
Ingredients
  • 1 lb ground chicken
  • ¼ cup Franks Buffalo Hot Sauce
  • ¼ cup Ranch Dressing
  • 1 tsp garlic powder
  • 1 egg lightly beaten
  • 3 pieces of soft white or wheat bread broken up into little bits
  • A few cranks of fresh cracked pepper
  • Cheese and small piece of cooked crisp bacon for the top of each one
Steps
  1. Preheat oven to 375.
  2. In a large bowl, mix together all ingredients (minus the cheese and bacon) with a spoon.
  3. Spray a roasting pan with cooking spray.
  4. Shape your chicken mixture into smallish meatball like circles. (The texture at this point will feel a bit loose but that's OK, as long as they hold together in a "ball-like shape" they will firm up in the oven.)
  5. Cook them in the oven for 12 minutes. Remove from the oven, top with cheese of choice and piece of already cooked bacon. Place back into the oven and cook an additional 3 to 5 minutes or until cheese is completely melted.
  6. Remove from the oven and cut into one to make sure the inside is no longer pink and piping hot!!!
  7. Serve with toothpicks or on buns as sliders. Serve with a ranch or blue cheese dip and chips on the side!
