Ingredients
  • 2 tablespoons of chicken fat or olive oil
  • 1 large shallot, sliced thin
  • 3 sprigs of thyme
  • About a pound of cleaned chicken livers
  • ½ cup brandy
  • 8 ounces mascarpone cheese (cream cheese also works, but I prefer the more delicate, slightly sweeter flavor of mascarpone.)
  • Salt and pepper
