Banana Pancake Bites

Ingredients
  • 1 ¾ cups old fashioned rolled oats
  • 3 small ripe bananas
  • 3 large eggs
  • 2 tablespoons erythritol
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
Steps
  1. 1. Place the oats, bananas, eggs, erythritol, cinnamon, vanilla, and baking powder in a large, powerful blender and blend until very smooth about 1 minute
  2. 2. POur the mixture into a silicone mold with seven wells. Place a paper towel on top and then top with aluminum foil. Tighten the edges to prevent extra moisture getting inside. Place the mold on top of you steam rack with handles.
  3. 3. Pour 1 cup water into the inner pot. Place the steam rack and mold inside. Secure the lid.
  4. 4. Press the manual or pressure cook button and adjust the time to 6 minutes.
  5. 5. When the timer beeps, quick release pressure until float valve drops and then unlock lid.
  6. 6. Pull the steam rack and mold out of the instant pot and remove the aluminum foil and paper towel. Allow the pancake bites to cool completely, and then use a knife to pull the edges of the bite away from the mold. Press on the bottom of the mold and the pancake bites will pop right out.
