Ingredients
- 1 ¾ cups old fashioned rolled oats
- 3 small ripe bananas
- 3 large eggs
- 2 tablespoons erythritol
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking powder
Steps
- 1. Place the oats, bananas, eggs, erythritol, cinnamon, vanilla, and baking powder in a large, powerful blender and blend until very smooth about 1 minute
- 2. POur the mixture into a silicone mold with seven wells. Place a paper towel on top and then top with aluminum foil. Tighten the edges to prevent extra moisture getting inside. Place the mold on top of you steam rack with handles.
- 3. Pour 1 cup water into the inner pot. Place the steam rack and mold inside. Secure the lid.
- 4. Press the manual or pressure cook button and adjust the time to 6 minutes.
- 5. When the timer beeps, quick release pressure until float valve drops and then unlock lid.
- 6. Pull the steam rack and mold out of the instant pot and remove the aluminum foil and paper towel. Allow the pancake bites to cool completely, and then use a knife to pull the edges of the bite away from the mold. Press on the bottom of the mold and the pancake bites will pop right out.
