Chipotle Cranberry Barbecue Sauce

Transitioning from 80% raw food to Whole Food Plant Based diet (WFPB) ***Cooking without oil and adapting my recipes accordingly***

2 tablespoons extra-virgin olive oil

1 medium yellow onion (7 ounces), diced

¼ teaspoon fine salt

2 cups (7 ounces) fresh or frozen cranberries

1 cup unsweetened or no-sugar-added cranberry juice

½ cup plus 2 tablespoons packed light brown sugar

2 tablespoons to ¼ cup diced chipotle pepper in adobo sauce and the sauce
