Teriyaki Roasted Vegetables
Ingredients
  • 8 oz baby portobello (crimini) mushrooms
  • 4 to 5 oz chopped broccoli florets
  • 4 to 5 oz asparagus (6 thick spears)
  • 2 oz sliced red bell pepper
  • spray oil (avocado, olive, etc...)

  • I used a little over 1 pound of veggies, feel free to mix and match your favorites based on what you have on hand! Onion would be an amazing addition as would snap peas. Toasted sesame seeds also make a tasty addition for topping this dish.
  • subheading: HOMEMADE TERIYAKI SAUCE:
  • ¼ cup low sodium soy sauce
  • ¼ cup rice vinegar
  • ¼ cup mirin*
  • 2 cloves garlic, minced
  • ½ tsp grated ginger or ground ginger paste
  • 3 TBSP brown sugar
  • 2 TBSP honey
  • ¼ tsp red pepper flakes (totally optional)
  • 1 TBSP corn starch
  • 2 TBSP cold water
