Classic French Bistro Salad
Ingredients
  • 3 tablespoons neutral flavored oil (sunflower, safflower, avocado, canola or grapeseed oil will all work)
  • 1 tablespoon walnut oil (You could use any type of nut oil or extra virgin olive oil.)
  • ½ to 1 teaspoon Dijon mustard
  • ½ teaspoon kosher salt
  • 1 tablespoon red wine vinegar (or cider vinegar, fresh lemon juice or white wine vinegar)
  • ½ medium finely minced shallot
  • ¼ teaspoon freshly ground black pepper
  • 7 to 8 cups tender salad greens Cleaned and spun in a salad spinner, if not pre-washed then tear into bite-size pieces. (See Café Tips above in the post for greens suggestions.)
