Grandma's Healthy Bran Muffins
Ingredients

  • ¼ teaspoon baking soda
  • ½ tsp salt
  • 1 ½ tsp cinnamon

  • ¼ cup brown sugar (or sub coconut sugar)
  • ¼ cup blackstrap molasses
  • ⅓ cup unsweetened applesauce
  • 2 eggs, at room temperature
  • ¾ cup unsweetened vanilla almond milk (or milk of choice)
  • 1 tablespoon apple cider vinegar
  • ⅓ cup melted coconut oil (or melted butter or vegan butter)
  • subheading: Optional mix-ins suggestions if you like:
  • ½ cup raisins
  • ¾ cup fresh or frozen blueberries
  • ½ cup chopped walnuts
