Easy Vegan Salsa Con Queso
Ingredients
  • 1 large potato, peeled and cooked
  • 1 cup baby carrots, cooked
  • 1 cup cauliflower florets, cooked
  • ¼ cup olive oil or avocado oil
  • 1 tablespoon lemon juice
  • ⅔ cup canned diced tomatoes with green chilies, drained (Red Gold Tomatoes).
  • 1 teaspoon garlic powder
  • ¼ teaspoon onion powder or onion salt
  • 6 tablespoons of nutritional yeast
  • 1 teaspoon kosher salt
  • ½ tablespoon chili powder or 2 tsp for less spicy
