Cauliflower Tikka Masala with Chickpeas
Ingredients
  • 1 tablespoon coconut or canola oil
  • 4 cups cauliflower florets (1 head, saved diced stalks for aromatic mix)
  • ¼ teaspoon salt
  • ¼ cup water
  • 1 (15 ounce) can chickpeas, rinsed
  • 1 ½ to 2 cups tikka masala sauce (1 to 2 jars)
  • 2 carrots, diced
  • 1 celery, diced (optional)
  • 1 bell pepper, diced (optional)
  • 1 medium onion, diced
  • 4 garlic cloves, minced or thinly sliced
  • 2 tablespoons butter
  • Fresh cilantro for garnish (optional)
