No-Churn Mascarpone Ice Cream
Ingredients
  • 8 ounces mascarpone (about 1 cup; 225 g)
  • 2 ounces heavy cream (about ¼ cup; 55 g)
  • ¼ ounce  vanilla extract (about ½ tablespoon; 7g)
  • 3 large eggs (about 5 ½ ounces; 155g)
  • 3 ounces sugar (shy ½ cup; 85 g)
  • 1 ounce light brown sugar, or natural sugar such as Demerara or turbinado, et cetera (about 2 tablespoons; 30 g)
  • ¼ teaspoon (1g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same weight
