Ingredients
  • 4 Bone-in, Skin-on Chicken Thighs
  • Salt and Pepper, to taste
  • 8 ounces thick cut Bacon (I used Pancetta with a little Olive Oil in the pan), diced
  • 1 large Onion, rough chopped (about a cups worth)
  • 4 Garlic Cloves, minced
  • 8 ounces Mushrooms, sliced (I used Baby Bellas)
  • 1 Cup Dry White Wine (I used Sauvignon Blanc, that's what I drink)
  • 1 to 2 Cups Chicken Broth (add more if needed to at least half cover the chicken)
  • 1 Bundle of fresh Thyme Sprigs, tied together with Butcher's Twine
  • 2 Tablespoons Butter
