Air fried fish sauce chicken wings
Ingredients
  • marinate the wings in 1 TBSP white wine, 1 tsp chicken bouillon, ¼ tsp pepper, 1 TBSP grated ginger, ½ tsp garlic powder, and ½ tsp onion powder at least 45 minutes
  •  
  • subheading: Coating (mix well):
  • 2 c potato starch
  • 1 TBSP garlic powder
  • 1 tsp pepper
  •  
  • subheading: Fish sauce mix:
  • 1 part fish sauce
  • 2 parts sugar
  • 1 to 2 tsp crushed red peppers (optional)
  • (I usually use ¼ cup fish sauce per lb of wings)
Steps
  1. Coat wings with starch, spray surface with cooking oil on all sides
  2. Air fry 12 minutes @ 400°, flip, spray areas that are white, fry another 5.
  3. Bring fish sauce mix to a boil and simmer till sugar is completely dissolved
  4. Stir in crushed peppers
  5. Remove from heat
  6. fry minced garlic and minced shallots in oil until golden brown
  7. Toss wings in fish sauce, add fried garlic and shallots, and serve
