Whole30 Chicken Marsala
Ingredients
  • 4 Chicken Cutlets (or 4 chicken breasts, butterflied)
  • kosher salt, to taste
  • black pepper, to taste
  • ¼ cup Bob's Red Mill Arrowroot Starch
  • 2 to 4 tbsp. olive oil
  • 2 tbsp. ghee
  • 2 shallots, diced
  • 2 cloves garlic, sliced thinly
  • 8oz. sliced mushrooms (button, cremini, or baby bella)
  • a pinch of crushed red pepper flakes (optional, or more to taste)
  • ¾ cup -1 cup of chicken broth
  • 1 tbsp. balsamic or sherry vinegar
  • ½ cup canned, unsweetened coconut milk- blended so that it is smooth and no longer separated
  • juice of 1 lemon
  • 2 tbsp. freshly chopped parsley
