Pasta Alfredo with Smoky Portobello Strips

Ingredients
- 1 box Whole Grain or Whole Wheat Pasta, cooked (8 to 12 oz / 230 to 340g)
- Alfredo Sauce, heated up
- Smoky Portobello Strips (directions below)
- subheading: For the Smoky Portobello Strips:
- 4 portobello mushrooms (2 per person)
- Marinade (recipe below)
- 3 handfuls baby spinach
- subheading: Marinade:
- 3 tablespoons water
- 3 tablespoons soy sauce
- 3 tablespoons Coconut Aminos
- 1 tablespoon apple cider vinegar
- 2 teaspoons smoked paprika
- 2 teaspoons garlic granules
- 10 turns black pepper
Steps
- Wipe the mushrooms with a paper towel to remove any dirt, then slice them into about
- ¾ inch strips. If your stems are very woody and hard (insert dirty joke here) remove
- and discard them, otherwise, slice them up as well. Place the strips into a ziplock bag
- or container with a leak proof lid.
- Place the Marinade ingredients into a bowl and stir. Pour the marinade into the bag
- with the mushrooms and seal the bag shut. Move the mushrooms and turn the bag so
- that they are fully covered in the marinade. Lay the bag flat and allow to sit for about 10
- - 15 minutes.
- Heat a skillet over medium heat for two minutes. Place the mushrooms in the skillet,
- along with the rest of the marinade and cook on medium heat for 3 minutes, then flip
- them over and cook for an additional 3 minutes.
- Place the spinach into the skillet and stir. Cook the mushrooms and spinach for about
- 2 minutes, until the mushrooms are lightly browned, tender and juicy.
- subheading: To Reheat the Alfredo Sauce:
- This sauce reheats best on the stovetop over medium-low heat, stirring occasionally,
- until hot. Microwave reheating is not recommended, but if you must reheat in the
- microwave, heat it slowly on a lower temperature, stirring occasionally, until heated
- through. If sauce is too thick, add a bit of water or unsweetened nondairy milk to thin it
- out.
- subheading: Assemble your din din:
- Cook the pasta per the instructions on the box. When the pasta is done, transfer it to a
- strainer and strain out as much water from the pasta as possible by tapping the
- strainer against the sink. You don’t want your dish to be watery, so drain your pasta as
- much as possible.
- Place a portion of pasta into the bowl you will be eating from and ladle on a generous
- amount of warm Alfredo Sauce. Top with Portobello Mushroom Strips and spinach and
- get ready to devour some major deliciousness!.
