  • 1 red bell pepper, stemmed, seeded and chopped fine
  • 1 small red onion, chopped fine
  • 2 garlic cloves, minced

  • 2 (15-ounce) cans cannellini beans, rinsed
  • 2 ounces (2 cups) baby arugula, chopped coarse
  • 2 tablespoons lemon juice
