  • 2 packages (10.8 ounces each) frozen chopped broccoli (or about 8 to 9 cups of fresh broccoli florets)
  • 1 (10.5 oz) can condensed cream of mushroom soup (NOT diluted) (I used Campbell's Healthy Request)
  • 1 cup grated cheddar cheese
  • 1 tablespoon lemon juice
  • 1 egg
  • ½ cup mayonnaise (I used light mayonnaise)
  • ½ small onion, grated
  • ¾ cup dry stuffing mix (I used Pepperidge Farm Herb Seasoned Stuffing Mix, but you can also substitute with an equal amount of crushed Ritz crackers)
  • 2 tablespoons melted butter
