Twice Baked Cauliflower
Ingredients
  • 1 large head cauliflower
  • 4 oz cream cheese, cut into cubes
  • ½ cup sour cream
  • ¼ cup green onions, minced
  • ¼ cup freshly grated Parmesan cheese
  • 6 slices bacon, cooked until crispy and crumbled
  • 1 cup grated sharp cheddar cheese
Steps
  1. Preheat oven to 350°
  2. Spray a glass casserole dish non-stick spray
  3. Cook cauliflower in a large pot of boiling salted water until cauliflower is tender, but not overly soft.
  4. Drain cauliflower well and mash with potato masher, leaving some chunks.
  5. Mix cream cheese, sour cream, green onions, Parmesan cheese and ¾ of the bacon into the drained cauliflower.
  6. Spread evenly in 1.5 qt glass casserole dish.
  7. Sprinkle with remaining bacon and cheddar cheese.
  8. Bake 20 to 25 minutes covered, or until hot and bubbly.
  9. Remove cover and bake 10 more minutes until cheese is slightly browned.
