Apricot Lime Chicken, Potato, and Broccoli 1-Pan Dinner
Ingredients
  • ⅓ cup apricot preserves
  • ¼ cup lime juice (freshly squeezed, from about 1 large lime)

  • 2 cloves garlic (peeled, smashed, and finely chopped)
  • ¼ teaspoon oregano (dried)
  • Optional: Pinch kosher or sea salt
  • 1 ¼ to 1 ½ pounds chicken breasts (boneless, skinless)
  • 1 pound baby or new potatoes (halved or quartered if large)
  • 1 medium head broccoli (trimmed and cut into stalks)
