Ingredients
  • subheading: For the meatloaf:
  • 1 heaping cup zucchini, roughly chopped
  • ½ white onion
  • 1 clove garlic, smashed
  • 1 lb ground beef
  • ½ tsp sea salt
  • ¼ tsp black pepper (omit for AIP)

  • 4 tbsp coconut oil (divided)
  • 1 bunch broccolini, trimmed (sub broccoli)
  • 2 small/medium sweet potatoes, diced
  • 1 tsp sea salt
  • ¼ tsp black pepper (omit for AIP)
  • ¼ cup coconut milk
