Okinawa Taco Rice タコライス
Ingredients
  • 1 red onion (divided; one-quarter for the salsa and three-quarters for the taco meat)
  • 1 tomato (or 2 small tomato)
  • 10 sprigs cilantro (coriander)
  • 1 lemon
  • subheading: For the Taco Meat:
  • 2 Tbsp neutral oil
  • 2 clove garlic
  • 454 g ground beef (I used 85% lean)
  • 8 tsp taco seasoning ( store bought or follow the recipe below)
  • subheading: For Serving:
  • 4 leaves iceberg lettuce
  • 6 cups cooked Japanese short-grain rice
  • 1 cup Mexican-style shredded cheese
  • subheading: For the Taco Seasoning (makes about 5 Tbsp):
  • 2 Tbsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp crushed red pepper (red pepper flakes)
  • 0.5 tsp dried oregano
  • 1 tsp paprika
  • 3 tsp ground cumin
  • 2 tsp Diamond Crystal kosher salt
  • 2 tsp freshly ground black pepper
