Pumpkin Muffins (Gluten-Free, Dairy-Free, Oil-Free)
Ingredients
  • 2 & ¼ cup gluten-free flour (I used chickpea flour)
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. ground cloves
  • ¼ tsp. ground ginger
  • 1 ½ cup pumpkin puree (not pie filling)
  • ¾ cup maple syrup
  • 3 Tbsp. tahini or almond butter
  • 2 Tbsp. flax meal mixed with 6 Tbsp. water
  • ⅓ cup almond milk or other plant-based milk
  • 1 & ½ tsp. vanilla extract
