Chiles Rellenos (Stuffed Mexican Peppers)
Ingredients
  • 2 pounds  fresh green chiles (poblano or Anaheim, large roasted and peeled, or canned whole green chiles)
  • 1 pound queso blanco (Mexican Manchego or Chihuahua cheese, of sliced or shredded)
  • Optional: ΒΌ cup all-purpose flour
  • 5 large eggs (chilled and separated into whites and yolks)
  • Pinch of salt
  • Oil (for frying, enough to reach a depth of 2 inches in your frying pan)
