Ingredients
  • 600 grams (1 ⅓ pounds) Hungarian túró or crumbly cottage cheese, mashed with a fork to a paste
  • 6 sheets phyllo dough
  • 200 grams (7 ounces) vermicelli pasta (other very thin pasta like angel’s hair also works)
  • 4 eggs, separated
  • 1 egg yolk, beaten, to coat the top layer of phyllo dough
  • 300 grams (1 ¼ cup) sour cream
  • 125 grams (⅔ cup) sugar
  • 1 vanilla bean or 1 teaspoon vanilla sugar (or vanilla extract)
  • 3 tablespoons butter, for the pasta
  • 5 tablespoons butter, melted (for the filling)
  • 5 tablespoons butter, melted (to brush the phyllo dough sheets)
  • 2 tablespoons butter, to grease baking dish
  • 1 tablespoon freshly grated lemon zest (using 1 medium lemon)
  • 100 grams (⅔ cup) raisins, soaked in warm water for 15 minutes, then drained
  • Few tablespoons of powdered sugar to finish
