Ingredients
  • 300 steamed beetroot(I get mine already steamed from shops, but you can steam or boil fresh beets if you like)
  • Big handful grated fresh cucumber
  • Big hand full finely chopped spring onions
  • 500g natural plain soy yoghurt
  • Spring / filtered water
  • Handful finely chopped fresh dill
  • 1 to 2 tbsp apple cider vinegar
  • Pink salt

  • And least but not last you will need a bunch of potatoes of your choice (I usually boil 1kg and with leftovers make a potato salad next day :) and more fresh dill to sprinkle on top.
