Scallop Cevice
Ingredients
  • 2lbs bay scallops (make sure they're fresh and sweet)
  • Equal amount of seedless watermelon, cut to the size of the scallops
  • Zest of one lime
  • Juice of 2 limes
  • 2 jalapenos, de-seeded and minced
  • 1 cup of cleaned chopped cilantro (about ½ a bunch)
  • 2 tbsl olive oil
  • 2 tbsp siracha
  • Salt and black pepper to taste. Be liberal with the salt
Steps
  1. Mix, let sit for ½ hour in fridge, then serve.
