Servings: 12 muffins
Ingredients
  • 1½ c. flour
  • 1 c. oats
  • ½ c. sugar
  • 1 tbsp. baking powder
  • 1 c. milk
  • ¼ c. oil
  • 1 egg
Steps
  1. Preheat oven to 400° F.
  2. Line 12 medium muffin cups with paper baking cups or lightly grease bottom of each.
  3. Mix flour, oats, sugar, & baking powder well.
  4. Beat egg lightly; then combine with milk & oil.
  5. Stir egg mixture into dry ingredients, mixing just until moistened.
  6. Fill each muffin cup ⅔-full.
  7. Bake till golden brown (app. 18 to 20 mins.).
  8. Let stand a few minutes before removing muffins from pan.
