Barktichoke Bean Bonanza
Ingredients
  • 400g tinned artichoke hearts, drained and sliced in half
  • 1 tbsp olive oil @honest_toil
  • 1 x 250g tub of ricotta cheese
  • 1 lemon
  • 1 x 700g jar of @boldbeanco Queen Butter Beans, drained
  • subheading: For the dressing:
  • 3 tbsp olive oil
  • A handful of fresh parsley, roughly chopped
  • 3 tbsp capers, roughly chopped
  • The juice of 1 lemon, zest reserved for garnish
