This recipe for homemade, creamy tomato soup is full of fresh basil and fire roasted tomatoes.
  • ¼ cup olive oil
  • 6 cloves garlic, crushed
  • 1 yellow onion, chopped roughly
  • 28 oz. can fire roasted diced tomatoes (or two 14.5 oz cans)*
  • 2 cups chicken stock (or vegetable stock)
  • ½ cup fresh basil
  • ½ cup heavy cream
  • Salt and Pepper to taste
