Tofu and Peanut Butter Curry
Ingredients
  • 3 Tbsp oil
  • 1 onion
  • 2 large garlic cloves
  • 2 Tbsp thinly chopped ginger
  • 9 oz / 250 g firm tofu
  • 3 heaping tsp curry powder
  • 2 ½ cup / 150 g chopped broccoli
  • 2 ½ cup / 150 g chopped cauliflower
  • 3 cups / 750 ml boiling water
  • 5 Tbsp tomato sauce
  • 2 Tbsp peanut butter
  • 1 tsp salt
  • + boiled rice noodles or rice for serving
